Pav Bhaji
Mumbai's iconic street food — a spiced vegetable mash served with buttery, toasted bread rolls.
Ingredients
- 3 large potatoes, peeled and diced
- 1 cup cauliflower florets
- 1 cup frozen peas
- 2 onions, finely diced
- 3 tomatoes, finely diced
- 1 green pepper, finely diced
- 4 garlic cloves, minced
- 1 inch ginger, grated
- 3 tbsp pav bhaji masala
- 1 tsp red chilli powder
- 4 tbsp butter, plus extra to serve
- 8 small bread rolls (pav), to serve
- Chopped coriander and lemon wedges to serve
Method

Boil the potatoes and cauliflower until very soft, then drain and roughly mash.

Melt 2 tbsp butter in a large pan. Add the onions and cook until golden, about 15 minutes.

Add the garlic and ginger, cook for 2 minutes.

Add the green pepper and tomatoes, cook until the tomatoes break down, about 10 minutes.

Add the pav bhaji masala and chilli powder, stir well.

Add the mashed vegetables and peas. Mash everything together in the pan.

Add a splash of water, remaining butter, and season generously. Simmer for 10 minutes, stirring frequently.

Toast the pav rolls, butter-side down, in a hot pan until golden.

Serve the bhaji with the pav, chopped onion, coriander, and a squeeze of lemon.
